Green-Colada Smoothie

  • 1 cup coconut water

  • 1 cup coconut milk, unsweetened

  • 1 cucumber

  • 2 cups pineapple, fresh or frozen* cut into chunks

  • 1 banana, frozen and halved

  • handful spinach

  • 1 tablespoon chia seeds

Directions:

In a high power blender, add liquids, chia seeds, cucumber, banana, pineapple, spinach. Blend until smooth consistency.

Raw Nut & Date Balls

  • 1 cup nut butter of choice

  • 8 dates, pitted

  • 2 tablespoons raw cacao powder

  • 2 teaspoons vanilla extract

  • 2 teaspoons coconut oil

  • 1 cup unsweetened coconut, shredded & divided

  • 1 cup dried cranberries

  • 2 tablespoons chia seeds

  • sea salt, pinch

Directions:

Place all ingredients (only half of coconut shavings) in a mixer or high power blender. Mix or blend well until forms a dough. Roll into balls, approximately 10 balls, then roll balls in a bowl with the remaining coconut shavings. Place balls on baking parchment paper, place in the refrigerator until balls are hardened.
