Salmon Loaf

  • 1 (14.75 ounce) can Wild caught salmon, drained, flaked and cartilage removed

  • 2 handfuls spinach, chopped

  • 1/2 red onion, chopped

  • 3 cloves garlic, chopped

  • 1 cup tomatoes, chopped

  • 1 1/2 cups corn kernels

  • 1 cup pineapple, crushed

  • 1 jalapeno pepper, deseeded and finely chopped

  • 2 cups bread crumbs or crackers, crushed

  • 2 tablespoons fresh parsley, chopped

  • pink himalayan sea salt

  • 1/4 teaspoon cayenne pepper

  • 2 tablespoons Bragg Premium Nutritional Yeast

Directions: Combine all ingredients, minus nutritional yeast. In a greased loaf pan, shape into a loaf. Sprinkle with nutritional yeast. Bake at 350F for 30 minutes.

Variation: Mix in quinoa or beans.
