Delicious & Simple Dinners
Salmon Loaf

1 (14.75 ounce) can Wild caught salmon, drained, flaked and cartilage removed

2 handfuls spinach, chopped

1/2 red onion, chopped

3 cloves garlic, chopped
-
1 cup tomatoes, chopped
-
1 1/2 cups corn kernels
-
1 cup pineapple, crushed
-
1 jalapeno pepper, deseeded and finely chopped

2 cups bread crumbs or crackers, crushed

2 tablespoons fresh parsley, chopped
-
pink himalayan sea salt
-
1/4 teaspoon cayenne pepper

2 tablespoons Bragg Premium Nutritional Yeast
Directions: Combine all ingredients, minus nutritional yeast. In a greased loaf pan, shape into a loaf. Sprinkle with nutritional yeast. Bake at 350F for 30 minutes.
Variation: Mix in quinoa or beans.
